I'm trying to figure out a simple way to run a small water pump continuously with the ignition on and then keep running for a set time when the ignition is cut.
This is the closest thing I've found so far but it needs a momentary switch pulse to activate it and I'm not sure how I'd get that to work?

Put a capacitor from the trigger pin up to +ve, when +ve is applied a pulse will go to the trigger, the value of the capacitor depends on the duration required of the pulse, try 10 or 20uF first and see if it works, You might need a bigger one I just cant say, it depends on the input resistance of the trigger pin. You might need a resistor between the trigger pin and earth too to create a time constant. You will have to experiment!

Having looked at that relay again, I don't think it can do the required 5 minute delayed turn off.
I did a bit more googling and found this adjustable timer circuit, but again it needs a push button activation.

I think I can get this to work by connecting to the little switch at the end of the ignition barrel which maintains power to the radio. Then when I pull the key out and lock up, the water pump should keep going for 5 mins.
